Carrot Vegan receipe

Vegan recipes are not necessarily very complicated to make. If you have friends over for dinner, eating vegan food, so here is a simple and absolute adventure, laced vegan carrot cake recipe with a vegan cream cheese frosting that you prepare at home in no time at all. This pattern allows the use of simple ingredients that are readily available in the home. Remember that vegan carrot cake recipe is not an animal or dairy products to use, so if you replace all the ingredients in the recipe, make sure that no animal or dairy products.

For the vegan carrot cake you will need:

- Grated carrot red - 3 cups packed

- Granulated sugar - 1 1/4 cups

- White refined flour - 2 cups

- Salt - 1/2 tsp

- Baking powder - 2 tbsp

- Baking powder - 1/2 tbsp

- Cinnamon - 2 teaspoons

- Freshly squeezed orange juice - 1/2 cup

- Canola oil - 3/4 cup

- Chopped raisins - 1 cup

- Chopped walnuts - 1 cup

Method:

- Preheat oven to 180 C.

- In a deep bowl, mix flour, sugar, salt, baking powder, baking soda and cinnamon. Use a wooden spoon to mix the ingredients. Do not use electric mixer.

- Add the orange juice and canola oil to the dry ingredients and mix well.

- Add the grated red carrots and mix well so that no lumps of carrot still in the mix.

- Lightly fold in the chopped walnuts and raisins into the mixture.

- Butter a baking pan with cooking spray or a little canola oil.

- Pour the prepared batter into the pan evenly.

- Bake in preheated oven for 45 minutes (until top is firm and a toothpick inserted in center comes out clean).

- Let cool on a rack before serving.

For the vegan cream cheese frosting:

Soy cream cheese - 1/4 cup

Vegan margarine - 1/4 cup

Powdered sugar - 2 cups

Vanilla essence - 1 tsp

Method:

- Use an electric mixer beat cream cheese and margarine until light and fluffy.

- Add the powdered sugar and vanilla and beat in well.

- Pour the mixture into a piping bag, and it is ready for use.

To assemble the cake:

There are three ways to assemble the cake:

- One is to cut the cake horizontally in the middle. Spread frosting on the bottom piece of the pie, cover with the top slice and press lightly.

- Second, is simply to spread or pipe the cream cheese frosting on the cake and let it cool in the refrigerator.

- The third way is to cut the cake and sprinkle icing sugar in a zigzag manner over the pieces.
