1 can (21 oz) cherry pie filling

In a bowl, whip the cream until soft peaks form. Gradually add sugar, vanilla sugar and continue beating the salt until stiff peaks form. Fold in sour cream. Remove six cherries from the cake and set aside. Spoon half of pie filling in bottom of six parfait glasses, top with half the cream mixture. Repeat the layers. Add the reserved cherries on top of each parfait. Add a sprig of mint to each of the parfaits, if desired.

Note to diabetics: This recipe can be made for people with diabetes by making the following substitutions: Splenda instead of sugar granules and lite cherry pie filling made with Splenda instead of regular pie filling.

CHERRY FANTASY CRUST:

2 cups all purpose flour
1 cup butter
1 / 2 cup brown sugar
1 / 2 cup chopped nuts

In a medium bowl, mix the above ingredients by mixing the brown sugar and flour together. Add butter and cut in as if to make the dough. Add the chopped nuts and press mixture onto bottom of a 9 x 13-inch baking pan. Bake at 400 degrees for 15 minutes. Allow crust to cool. Crumble and spread evenly in pan.

Filling:

2 cups whipped cream
1 pkg (8 oz) cream cheese, softened
2 cans cherry pie filling
1 cup powdered sugar
1 teaspoon vanilla *

Whip the cream and set aside. In a mixing bowl, beat cream cheese, powdered sugar and vanilla together until well blended. Fold in whipped cream and cherry pie filling. Pour filling over crust. Cool overnight before cutting to serve.

* To change the flavor a bit, use 1 / 2 teaspoon vanilla flavoring and 1 / 2 teaspoon almond flavoring.

CHERRY Cream Dessert

2 pkgs (3-ounce) black cherry flavored gelatin *
2 cups boiling water
1 pkg (8 oz) cream cheese, softened
1 cup sour cream
1 teaspoon vanilla extract
1 / 2 cup sugar *
1 / 2 cup chopped pecans
1 can crushed pineapple, drained
1 can cherry pie filling *

Dissolve gelatin in boiling water and pour in a 9 x 13-inch bowl or pot, refrigerator until firm.

Mix cream cheese, sour cream, vanilla, sugar and chopped pecans and stir in pineapple. Spread the mixture over the set gelatin. Chill. Top with pie filling before serving.

* You can easily convert it into a diabetic or low sugar dessert by using sugar-free gelatin, granular Splenda instead of sugar and no added sugar, Splenda-sweetened pie filling!

3 / 4 cup whole wheat pastry flour *

1 cup peanut butter
1 / 3 cup Splenda Brown Sugar Blend

1 teaspoon vanilla extract
1 / 2 cup sugar-free chocolate chips **

Preheat oven to 350 degrees. Spray an 8-inch square baking pan or dish with nonstick cooking spray, set aside.

In a small bowl combine the flour, baking powder and salt.

In a medium bowl, mix the peanut butter, Splenda, and eggs, stir vigorously until creamy. Add milk and vanilla extract and stir until smooth.

Add the flour mixture into peanut butter mixture, stirring until well combined. Stir in chocolate chips.

Divide the dough into the prepared pan. With the back of a large spoon or by hand, pat down dough until smooth. Bake at 350 degrees for 15 minutes or until just slightly airy and bright are just beginning to brown around the edges. DO NOT overbake! Remove from oven and let cool for 10-15 before cutting into 16 bars.

* If you do not have whole wheat pastry flour, use 1 / 2 cup whole wheat flour and 1 / 4 cup cake flour.

** I use Hershey's Sugar-Free Chocolate Chip. They are very nice. If your grocer does not have it, use dark chocolate chips.

Per bar: about 137 calories, 12 g carbohydrate, 4 g protein, 8 g (2g sat) fat, 9 milligrams cholesterol, 106 mg sodium, 1 g fiber

Two proteins
1 / 8 teaspoon cream of tartar
